Corfu is famous for its wonderful food. The Corfiot cuisine takes tastes, smells and materials from thousand years ago and creates wonderful traditional hearty dishes for all tastes! The Corfu kitchen has all the Mediterranean features. Using materials such as unique Corfiot olive oil from the variety of lianoelias, garlic, kum quat, basil, mint, and many spices such as black pepper, turmeric, cinnamon, cloves, nutmeg and of course the unique ginger! Of course Corfiot wine, variety kakotrygis and other local wine productions are here to accompany your every meal!

Along with the basic ingredients, Corfiot dishes accompany fruits and vegetables from the fertile land of Corfu. In Corfu you will find a local variety of wonderful little fragrant and crimson strawberries! Unique greens but also wild asparagus! Rosemary, laurel, sage, thyme, chamomile, but also local mountain tea.

Corfu was influenced by all the peoples who came in contact and in turn made its own food versions. So we have our own mashed potatoes (Maspapata) our own version of Gingerbeer (Tsitsimpira), our unique Corfiot butter, the wonderful vanilla and chocolate creams, the “dish of the poors” rimpolido with ingredients left over from previous meals, the one and only savouro with no fish and raisins but also the unique cold cut noumpoulo!

Unique sweets accompany our Corfiot dishes. Mantoles and crème broule, tartes, pasta flores and many other local sweets and desserts. But the most famous recipes are three. The famous Corfiot Pastitsada with spaghetti and braised rooster or beef, Bourdeto with fresh fish skate and potatoes but also the unique Sofrito with pork and lots of garlic!
